El presente trabajo de grado, es una caracterización del proceso logístico de la cosecha en un Ingenio Azucarero para identificar sus respectivas restricciones, analizar cómo estas afectan el proceso y proponer un modelo de asignación de recursos para poder gestionarlos de manera eficiente en la medida en que incidan directamente en el buen funcionamiento del proceso. Para esto fue necesario determinar los subprocesos que constituyen al proceso logístico de la cosecha: programación de la cosecha, programación diaria de quema y corte de caña, alce y transporte de caña, entrega de la caña en fábrica y apronte de caña en patio; y aplicar la teoría de restricciones para estudiar el comportamiento, el papel y las variables que afectan a cada uno de estos impidiendo un ciclo de flota eficiente. Se pudo determinar que tanto la molienda, como el alce presentan restricciones importantes para el ciclo de flota y que al ser modeladas por medio de una simulación, se puede obtener una asignación de recursos óptimos./Abstract:This investigation, is a characterization of the logistic process of the harvest in a sugar mill to identify their respective restrictions, analyze how they affect the process and propose a model of allocation resources to manage them efficiently to the extent that directly affect the proper functioning process. For this it was necessary to determine the subprocesses that constitute the logistic process of the harvest: schedule of the harvest, daily schedule of cane burning and cane cutting, elk and cane transport, cane delivery in the factory and cane apron in the yard; and the application of theory of constraints to study the behavior, the role and the variables that affect each of these, preventing an efficient fleet cycle. It was determined by both the milling and the moose present important restrictions for the fleet cycle and that being modeled by a simulation, an optimal allocation of resources can be obtained.
